The best way to learn about shuttles is to practice flying them, of course. Switch to a shuttlecraft and head out to do some exploration -- gather data from anomalies, and while you're picking up useful materials and information, you'll also pick up performance telemetrics about your shuttlecraft and about shuttle operations in general.
Be careful! Shuttlecraft aren't really designed for combat, so you'll want to avoid getting into any fights. Your best bet is probably to head to an exploration area and scan various anomalies there. Try to avoid enemy ships, or you may get more than you bargained for!
